It also happens to be one of the tastiest things we've invented.
(Makes 4 burritos)
1 onion, sliced
4 cloves garlic, sliced
1 red pepper, cut into strips
1 tbsp tomato puree
1 tbsp Lebanese 7 spice mix
(or a mix of ground coriander, allspice, and cinnamon)
1 tsp chilli powder
400g minced lamb
Pomegranate molasses
200g cooked rice

Start by frying the sliced onion in a pan with some olive oil until it starts to brown. At this point add the sliced peppers and garlic and continue to fry for 5 mins or so until the onions are nice and brown and the peppers slightly softened. Remove from the pan and set aside until you've done the lamb.
Get the pan back on the heat with a bit more oil. When it's nice and hot add the lamb mince and fry over a med-high heat. Add a good squirt of tomato puree and a heaped tablespoon of Lebanese 7 spice mix. Making your own is easy enough, but you could use a simpler mix of ground coriander, allspice, and cinnamon (or for a more North African twist you could try a dollop of harrisa paste).
Fry the lamb mixture a bit more to let the tomato puree cook a bit and then add the vegetables you cooked earlier to the pan. Give it a good mix to combine and add a pinch of salt along with some chilli powder if you like. We added a glug of pomegranate molasses (a Middle Eastern favourite), but if you don't have any you could try some ketchup instead of the tomato puree to add some sweetness.
Now that the lamb mixture is ready, start preparing the lovely side salads and things to go with it.
We went for:
- Mixed salad leaves
- Sliced gherkins
- Onion relish (finely slice a white onion and mix together with a squeeze of lemon juice, some olive oil and a sprinkle of sumac if you have some)
- Raita (stir some mint, crushed garlic and grated / finely cubed cucumber into plain yoghurt)
A few pickled chillies from a jar or some of our slutty red cabbage slaw wouldn't go amiss here either.
Pile your wrap up high with rice, lamb and salad quick before the inevitable realisation that you've definitely over-filled it and are never going to manage to close the thing.
