A quick and tasty mexican party food for when '3 for 2' spring rolls and vol-au-vents get boring at Christmas time.
Combine half a tub of riccotta and a square of feta with a bag of cooked spinach (squeezed dry), the same mix as made in Oliver's 'borekas'.
Cut in half 8 chunky green jalapeno/ mild green chillies (Waitrose ones are nice), and carefully cut the seeds and any pith out to leave a nice cavity inside, akin to some sort of narrow boat.
Pile in the filling, a good spoon in each.
Roast in a hot oven (220) for 10 minutes on a baking tray , until the undersides are a little blackened.
Serve with cold beer, and a squeeze of lime juice over the top.
