This is a bit of a staple. If I ever see king prawns on offer in the freezer section I make sure I stock up. Even on offer they are relatively expensive (maybe £3 a bag) but you only need a handful in a noodle dish to make it awesome. You can keep the bag in the freezer and just take out a small bunch as and when needed.
Before you begin, get everything ready. Grab a handful of prawns from the freezer and defrost by placing them in a bowl under some cold running water. Prep any vegetables you fancy using by cutting them into fairly small strips- I sometimes buy those packs of prepped bags of mixed veg (sprouting broccoli, sugarsnap peas, fine beans, peas).
When you've got everything ready, start by blanching (briefly boiling) the greens for 2-3 mins until cooked but still with some crunch. Drain in a sieve and run under cold water for a while to cool.
Next boil the noodles according to the packet instructions and again drain and run under cold water.
Running the veg and cooked noodles is important so they don't carry on cooking and go all mushy.
Heat a drop of oil in a pan and gently fry 1 finely sliced garlic clove until translucent. Turn up the heat and pour in a couple of tablespoons of oyster sauce and a bit of chilli paste.
Soon after, add the cooked vegetables followed by the defrosted and drained prawns. Cook over a medium-high heat until the prawns are cooked through.
Chuck in the drained noodles and toss in the sauce so that everything is nicely coated. Add a dash of soy sauce if you feel it needs it!
