Gentle....complex....powerful.... no its not your ideal man, but a super tasty dip, made for the winter months.
Soak 250g of salt cod in water for 24 hours, changing the water a few times. Salt cod is very cheap and available in various big super markets and food stores)
Place the salt cod in a pan with a pint of milk, some whole peppercorns, some bay leaves and chunks of an onion. Simmer for 10 minutes once boiled- not boiling too vigorously. Remove the fish flakes.
Cook 200g of new potatoes in the milk for 15 minutes, until soft.
Sieve out the bits form the left over milk.
Add the fish and potato and enough of the milk to a blender to make a smooth mash (not a puree though)
Add a few glugs of olive oil, to your taste, and season well.
Serve with rustic chunky bread, or with whatever you feel....
