Normally, I hate cooked spinach. The texture is just all wrong in my mouth. But add blended cashews, yoghurt, and lots of spice - and then paneer cheese? It suddenly gets all right.
I used this recipe from noms for the poor as the base for my curry, but replaced the kale with spinach, and just used normal mustard seeds. Handy tip - get frozen spinach. It's much cheaper than it's fresh cousin, lasts forever in the freezer, and still cooks really well.
