Morning Y'all. Get some Springsteen on the radio and enjoy this stateside breakfast form across the pond.
For 2 people we used 6 eggs, a pack of smoked back bacon, 8 scotch pancakes and a medium strength maple syrup.
We read about cooking bacon in a little water before it started to brown in the frying pan, so we tried it this way. Just fill a good heavy based pan with the bacon (no overlapping rashers!) and just cover with water. Heat the pan (we used two pans due to number of rashers) and leave until all water is evaporated. Turn to a medium heat, and when the water has all gone, press the fat against the pan with a wooden spatula, it should stick a bit, and begin to golden.
Just before its ready add a teaspoon or two of maple syrup and toss around the pan.
Mean while make the scrambled egg, Manger Sans Frontieres style, toast the Pancakes lightly and warm some plates in the oven.
When it all comes together douse with Maple Syrup and top your pancake stack with a tiny butter cube if you feel you need it.
Enjoy in front of the TV. American style.

+Make sure the scrambled egg is the last thing thats ready, everything else can stay warm for a few minutes, but the egg can't hang around.
+ Invest in real maple syrup, any other substitute isn't worth the time of day.
