Oyster mushrooms
Chinese 5 Spice
Lightly toasted the peanuts and sesame seeds and set aside.
Put the ginger, chilli, basically all of the coriander and spring onions in the belnder and whizz until finely chopped.
Get the noodles on the boil and remove when ready.
Empty into a very hot wok with some sesame or sunflower oil with the crushed garlic cloves.
After a minute or so add the beansprouts and cook for a couple more minutes, then add the hoi sin, soy and the juice of a lime.
Cover the steak in 5 spice and pepper and sear for a minute on each side. Cut up with scissors. On the hottest heat add more oil to the steak pan and brown off the oyster mushrooms, which will only take a couple of minutes whilst the steak rests under foil for 5 mints or so.
Add the noodles and mushrooms to the stir fry and serve with the steak and some chopped corainder.
This wont take you 15 mins as promised, but its worth the 40 odd minutes we spent on it!
