Nothing can beat the simple combo of silky eggs, sweet onions and crisp potatoes on a Sunday morning. The perfect bedfellows. Normally when I fry potatoes like this I'd boil them before frying, but this time I didn't want to hang about so I cut them into thin sections so that they cook more quickly. It might be best to use a couple of pans here.
Start by frying a sliced onion (1 per person - they reduce a lot) and add to a pan with some hot oil. Cook slowly over a medium heat to allow the onions to really deepen in colour and become sweet.
Once the onions have had a few minutes. Heat a second and add the sliced the potato and spread out evenly so that all the pieces are getting some action. Keep the heat low if using raw potatoes. Otherwise, you can just go for it and crisp them up nicely.
When the the onions and potatoes have taken on some nice colour, get on with the eggs. Crack 2 or 3 eggs into a bowl with some salt and pepper and give it a quick mix with a fork. Heat some butter in a pan over a low heat and tip in the eggs. For lovely soft scrambled eggs keep the heat low and keep stirring gently as it cooks - about 7 or 8 mins.

If you're after something more substantial, here are some ideas:
- some large grilled field mushrooms. They would be superb here.
- bacon. Everybody loves bacon.
- black pudding. Not everybody loves black pudding. (But everyone should.)
- grilled tomatoes... if that's your thing.
