Meatballs
1 squash, cut into small chunks
1 courgette cut into chunks
2 onions, finely chopped
6 garlic cloves, finely sliced
2 tins plum tomato
Spices
ground coriander - 1 tbsp
ground cumin - 1 tbsp
garam masala - 1 tbsp
cinnamon - 1 tsp
ground ginger - 1 tsp
paprika - 1 tsp
Heat some olive oil in a large pan. Once the oil has heated up tip in the meatballs into the pan and fry until nicely browned all over. When the meatballs are browned, scoop them out of the pan and into a dish and set aside until later.
While the meatballs are frying, chuck the onion and squash into the pan and fry softly together for a good 10 mins until the onions are sweet and translucent and the squash starts to soften.
At this point, add the garlic and courgette (if you add them at the start the garlic can frazzle and burn, and the courgettes can become super mushy).
Add both to the onions and fry for a another few mins. Once the whole lot has started to turn a nice golden brown add all the spices and str it all to coat the veg. Then tip in 2 tins plum tomatoes along with a pinch of sugar.
Turn down the heat and let it simmer away for up to an hour until the sauce has thickened and the squash has started to disintegrate (crush the pieces with the back of a wooden spoon if they are still intact).
Season with a pinch of salt and pepper.
Serve with some freshly prepared couscous.
