Try spending an hour on a Sunday making your lunches for the week for under £1 a day.
Roughly chop 2 red onions, 2 courgettes, 3 peppers and an aubergine into a big baking tray and drizzle with olive oil and shake over some cumin or ras al hanout powder (or if you you want to go more 'club-med' oregano and basil) and roast for 15 mins at 220. Cut an unpeeled garlic bulb lengthways and add to the tray and roast for another 15 mins on 180. Squeeze out the guey garlic onto the rest of the veg, discarding the peel.
Meanwhile soak 500g cous cous in 650ml of boiling water for 5 mins. Fluff with a fork and add olive oil, balsamic vinegar and some dried mint of you have some around.
Decant both into fridge worthy containers- this will easily keep for 5 days.
Every day prepare a Tupperware of cous-cous and veg along with some crumbled feta cheese, mixed seeds (85p from Sainsburys) and some chopped mint or coriander or chilli if you like.
Lunch for the week ... done.
