Fed up of greasy, stodgy winter food? Make this simple broth with fresh, strong flavors whilst you wish away any winter ills.
Into 2 litres of boiling water add a sliced up stick of lemongrass, a thinly sliced bulb of ginger, 4 crushed garlic cloves, 3 spring onions cut in half, a birds eye chilli sliced length ways, 2 sachets of miso paste (or 1tbsp), and the right amount of vegetable stock. Leave for an hour to simmer (or over night if you like) before sieving out all the chunky bits, leaving just the broth. (be careful at this point not to pour the broth down the sink...it has been done!)
Cook off some soba noodles in a separate pan for 5 minutes whilst browning off some oyster mushrooms in a frying pan.
Serve with a selection of fresh mint, coriander, finely chopped spring onions, and some fresh chilli, as shown below.
