Continuing the lunch theme, here's a tasty little salad to bring some life to the old lunchbox. Play around with the herbs. I used tarragon but some fresh basil, oregano or marjoram would be lovely in here too.
Drain a tin of mixed beans and rinse under running water. Let the excess water drain off and then tip into a nice big bowl. Cut up a handful of little cherry tomatoes into small pieces and then very finely chop half of a small red onion. Crumble in half a block of feta cheese and add a good few glugs of nice olive oil and some red wine vinegar (or even better, sherry vinegar). Tear up a good handful of fresh tarragon leaves. Give the whole lot a good mix and set aside for lunch.
To make a more substantial lunch, you could add some torn up pieces of rustic bread to make it go further.
