A lovely spring salad using nearly all left overs.
Cube half a baguette into inch cubed bits (roughly), and put in the oven at 150 for 25 minutes (this makes the bread dry and crispy- leaving the bread out for a day or two will stale it up nicely!)
Cube 5 tomatoes and sprinkle with a little salt.
Add 2 tablespoons of our tomato sauce to a frying pan with the tomatoes and a good drizzle of your best quality olive oil.
At this point many different things can be added....
+Any colourful raw vegetables- red peppers, avocado or perhaps some griddled courgette
+Mozzarella or some cubed feta
..... but in this salad less is certainly more.
Heat this very gently, until no more than warm, no cooking required here, just to get the flavours and aromas going.
Add the cubes of bread, season and tear over plenty of fresh basil and combine well.
