There are a lot of ingredients and it will be tempting to leave bits out here and there, but don't be tempted to leave out the fennel seeds - that's what really makes it!
Ingredients
- olive oil
- an onion, finely chopped
- a clove of garlic, chopped
- a tin of plum tomatoes
- a coupe of tablespoons of tomato puree
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1 bay leaf
- 1 teaspoon fennel seed
- a pinch of sugar
Directions
- Heat the oil in a large pan. Add the onion and garlic and fry until soft and sweat.
- Once the onions have become translucent, add tinned tomato and tomato paste and stir.
- Add all the herbs along with a pinch of sugar and some salt and pepper.
- Bring to simmer over a very low heat and leave for about an hour to bubble away gently.
Then it's ready to go on that pizza.
