A proper tartare
A really simple thing to make at home. It takes little extra effort but can really make a difference to your meal, especially if you've got people around for dinner.
Roughly chop 4 or 5 small gherkins and a handful of capers and place them in a bowl. Now very finely chop a shallot and add to the bowl (raw onion would be far too harsh here). Chop a generous amount of fresh dill (maybe some parsley too) and add to the other ingredients. Finally, add a dollop of proper mayo and maybe a squeeze of lemon before stirring it all together.
and some good things to do with it
... with cold boiled new potatoes - if I believed in guilty pleasures, this would be mine. It's not unheard of for me to head for the fridge when everyone else has gone to bed and scoop up tartare sauce with the leftover cold potatoes and eat it then and there. Bliss.

- with fish - you really can't beat some homemade tartare with some lovely salmon or trout.
- in a sandwich - slather it on the bread before piling in some hot fish fingers.
- a special slaw - stir through some shredded cabbage, onion and carrots (see our post on slaws)
- potato salad with a twist - Combine with some boiled waxy potatoes. Great for a picnic or have it as I did - with good old fish fingers and some home made mushy peas.
- a pimped-up egg mayo - this really was a revelation. Stir some left-over tartare sauce into chopped hard boiled eggs. Amazing.
