A great midweek meal for 4 - 6 , given them all at least 3 of their 5 a day!
Soften 2 onions and 3 sticks of chopped celery in some butter and oil until soft, but not brown.
Add 1.5 litres of vegetable stock (using boullion vegetable stock powder) and a diced celeriac and a diced large potato (750g all together).
Boil until veg breaks apart with a fork, about 20 minutes.
Add 3 packs of fresh watercress, and submerge witht he wooden spoon.
After a minute, blend with a stick blender.
Add a dash of lemon juice and a pinch of nutmeg.
Slurp up with some warm baguette and some goats cheese.
