A locally based company specializing in West African Cuisine, "Yassin's Yassa" kindly gave us some of their spice mix to make this traditional Gambian dish, a Fish Yassa.
The spice mix is really lime-y and spicy ..and really unique.
Here's what I did :
I bought some value firm white fish (pollock) from the super market. Would cost under a fiver for 4 people.
The fish, along with some wedges of onion and peppers, were soaked in the marinade overnight.
The next day I roasted the veg in the marinade at max oven temp (250 degrees) and for the fish I fried it at a really high temperature for no more than a minute on each side. The fish will become very delicate so take care when handling.
I served this with a very quick Nigella inspired coconut rice.
Fry off 3 spring onions in a heavy based pan and after a few minutes throw in 300g of Basmati rice. Add a 400ml can of coconut milk and 600 mls of water and give a good stir. Allow to boil, then turn down to minimum and leave for 15 mins, by which time the water should all be absorbed.
Add some more lime and some coriander if you like.
Close your eyes and imagine you are on the banks of River Gambia- (for only £2.49 per pack)
