Finely slice 2 red onions and submerge in boiling water with some dried or fresh chillies for 10 minutes.
Drain well and squeeze over juice of 3 limes and 2 oranges.
Leave for as long as you can, but ready within an hour to eat.
Great with our chicken tinga or anything Mexican.
