As quick as it takes to put ingredients in a blender this tasty healthy dip is perfect for packed lunches with a pitta or two.
Add the following to your blender bowl:
1tsp ground cumin (or toasted cumin seeds crushed in a pestle and mortar)
2 cloves garlic
50 g walnut pieces
2 heaped tbsps fine breadcrumbs from packet (or stale bread)
1 packet of cooked beetroot (250g)
1 tbsp tahini
the juice of a lemon
Blend until smooth.
Add olive oil to loosen if needed.
Season with salt and pepper.
Share with warm pitta.
