This is one of Nigel Slater's most popular recipes, as its so easy and delicious, just like Nigel himself.
Grate 250g of potatoes and a carrot in your blender. Squeeze all the water you can out them them.
Add to the grated veg a good heap of chopped dill, 2 eggs and a 200g pack of Feta.
Mixing with your hands at this point is quite fun, again squeezing any excess liquid out.
Get a pan of hot olive oil ready and shape into golf ball size patties, add to the pan with a satisfying sizzle, and flatten gently. Keep on a moderate/high heat.
The most important thing now is to leave them, they will be delicate and wont want to be prodded. When you see the sides turning golden, try and flip them, if they are ready to be flipped they will move as one and help you out a bit.
Fry on the other side until golden.
Enjoy with a yoghurt filled with chopped mint and parsley.
We had a hunt around a very empty fridge and decided to dice some pepper and beetroot in a bowl and dressed it with some chopped mint, sherry vinegar and olive oil to make a nice quick salsa. We'll definitely be trying the same technique with other vegetables in the future.
