This is called New York Guacamole because I learned to make it there, not because it's authentic Big Apple-style! This will make enough for two or three people as a dip.

One large ripe Haas avocado
Half a medium red onion
Juice of half a lime
Salt
A handful of fresh coriander, chopped

It's really simple and tastes delicious. First, halve the avocado and remove the stone. Then use a spoon to scoop out the flesh and place in a large bowl.
Finely chop the red onion and add this to the bowl. Now, take the half lime and squeeze into the mix. You can use a fork to press against the inside of the lime to really get all the juice out.
Now, take a good-sized pinch of salt and add. Last, take your chopped coriander and place on top.
Take the same fork you used to squeeze your lime, and mash the mixture together. You don't want it too fine and liquid like shop-bought guacamole; chunks of avocado are one of the delights of this recipe.
And there you go! We've served it with tortilla chips, in wraps, and with the three-bean chilli that will one day grace this blog.
