I roasted the bone in the oven and spread it on some toasted bread with a lovely parsley salad. It was really delicious!
if you're curious, here's what to do...
Roast the marrow bone in a hot oven (220C) for about 20 mins. It will start to caramelise and bubble at the edges.
Meanwhile, knock up a zingy parsley salad to go alongside:
Chop up a small handful of parsley leaves and capers. Finely chop half a shallot.
Combine the lot in a small bowl with a glug of olive oil and a cheeky squeeze of lemon juice.
Scrape out the marrow with a teaspoon, spread it over some toast and top with the parsley salad!
