Pop the kettle on to boil 150g of "Orzo" pasta for 5 minutes- kind of rice looking stuff- not to be confused with the potent Greek Spirit Ouzo. Drain and run under cold water.
Chop up 3 peppers and 2 red onions into big chunks and add to a roasting dish with some oil.
When roasted for 15 minutes at 200, add 300g cherry tomatoes, 1 can of chick peas, the Orzo and a can of Sainsbury's mixed beans and a good dollop of Sainsbury's own lemon pesto (£1) and a garlic bulb cut in half lengthways.
Roast for another 20 minutes, turning occasionally.
In the mean time zest a lemon into a big dish (that will fit in the fridge) and sprinkle in some pumpkin seeds.
Pour hot veg mixture over the lemon zest and seeds, allow to cool before adding some fresh basil or some cheap Sainsbury's Greek style cheese (feta).
Enjoy for the full 5 days, there's plenty of it!
