Do you ever wish you could snack on something instantly filling, temptingly cheap but super healthy? Well this recipe is for you.
A slice of this unashamedly dense and crumbly loaf is perfect in between meals to keep hunger a distant thought.
Mix 220g white self raising flower with 30g linwoods flaxseed (optional, just use 250g flour if not) and 100g butter. Rub together with your fingertips until you get what looks like a bowl of breadcrumbs.
Add 2tsp salt, 2tbsp soft brown sugar, 200g oatmeal, and 450ml buttermilk to form a wet dough.
Plop into a 2lb (large) loaf tin, already greased.
Cook at 200 for 35 mins.
Confirm its done by percussing the underside to hear its hollow dulcet tones.
Will keep for a few days, great toasted with soft butter or even goats cheese if you think you are just being too healthy.
