Something different for supper using simple ingredients.
Gently fry off a couple of chopped onions, once softened add a clove or 2 of sliced garlic, a couple of table spoons of bashed cumin seeds, and a pinch of cinnamon and chilli. Fry a little longer and add 2 tins of plum tomatoes. Add some salt and a pinch of sugar and Leave to simmer for 40 mins or so to become a thick rich sauce.
Meanwhile thickly slice some par-boiled potatoes.
Normally I would fry these in a pan, but this time I grilled them until golden brown. Slightly less oily but equally delicious!
Fry an egg and serve with the potatoes, tomato sauce and sprinkle some chopped parsley and chilli flakes over the top.
