Inspired by Jamie, these wraps tick all the right boxes- healthy, cheap, quick and scrummy.
Blend together, in a food processor, a tin of mixed beans with a tin of chickpeas and a tin of green beans, with the zest of a lemon, a couple of large spoons of flour, a dollop of Harissa paste, a tablespoon of allspice and the stalks of a bunch of coriander.
Make into ping pong ball size and then squish down in a pan of hot oil,to make little mini burgers. The key here is patience, keep the heat height, but don't disturb the falafel until they are crispy on the underside. Then flip gently until both sides are golden.
Meanwhile, roughly chop a couple of peppers, any colour, into pieces and some spring onions in half - add to a really hot griddle pan, until nicely charred.
Add some form of chilli sauce over the top of a tub of cottage cheese, to go with the wraps- weird but it works.
Blend 4 tomatoes with a good handful of coriander, some lime juice, a clove of garlic, and a red chilli, to make a quick salsa to go with.
If you like you can add some pickled red cabbage to bulk it out a bit.
