Here's the recipe for the dipping sauce again...
1 tbsp fish sauce
2 tbsp lime juice
1 clove garlic, crushed or finely chopped
1 small hot chilli
a pinch of sugar
fresh coriander leaves, chopped
For the chicken wings
Tip the wings into a snug dish and tip over the sauce. Leave to marinate for a couple of hours, or overnight in the fridge.
Heat a griddle pan over a medium high heat until truly hot (I'm sure you could use the oven's grill setting too). Lay out the chicken wings on the hot griddle and leave to sizzle and char before beginning to turn them. They take longer than you think, perhaps 15-20 mins before they are cooked through to the bone. So cook for about 6 or 7 mins on each side.
Meanwhile, pour the remaining marinade in a small saucepan and reduce slightly over a low flame to create a sticky sauce that you can pour over the wings as they come off the griddle.
Serve with some sticky rice and steamed greens.
