Just a very simple supper for one, livening up a regular students 'pasta and pasta sauce' with a bit of booze and love.
Cook the pasta (I cooked enough for lunch, which ended up being yummy seconds).
Soak dried porcini in a small amount of boiling water.
Drain pasta and add the sauce (thanks Loyd), oregano, a crushed garlic clove,the soaked porcinis and their juices and some capers (pictured below).
Now imagine Peter Andre without his six-pack, the Queen without her corgis etc.....
This is like having this dish without its defining ingredient, brandy - just a small slosh in the bottom of the pan, boiled off for a minute or two.
Great with parsley.
If you are on the cheap like us, serve with the slightly odd relative of Parmesan, Grana Padano.
