This is a really simple noodle salad that's great cold and would make for a tasty and healthy packed lunch. It uses a very easy dressing made by combining some sweet chilli sauce and lime juice. I added some broad beans that I cooked from frozen and some dried seaweed that I happened to have. But you could easily leave that out, or use different beans (peas, mange tout whatever).
Ingredients
Boil the noodles as directed on the packet. Drain, and run under cold running water to refresh. Meanwhile, bring another pan of water to the boil and add the frozen broad beans. Cook for 4 mins or so and then drain. I peeled them, but then I like little jobs like that. If you can't be bothered, leave them as they are. I happened to have
Combine the noodles, broad beans, sliced onions, seaweed prawns and chopped coriander in a large bowl. Mix the sweet chilli sauce and lime juice in a little bowl (I did it to a ratio of about 2:1). Pour dressing over prawn noodle salad and toss to make sure it all gets coated.
