A classic. If done badly its a good way to make a nice slop on a plate, but a few simple tips and added extras inspired by the Fabulous Baker Brothers can transform this to a truly memorable feast. Enough for 4, but we increased this recipe by 50% to feed more.
An hour before you start using it, make the batter. Whisk 5 eggs together in a big bowl and and add 275ml of milk and 275ml of soda water. Sift in 275g of flour until smooth, season and leave aside.
Now preheat the oven to 220 C
Brown 8 sausages relatively slowly in a frying pan, or even better in an oven proof dish, adding 2 red onions, cut into thick wedges, a couple of sliced garlic cloves, some fresh thyme and a generous pinch of fennel seeds.
Allow the flavours to infuse and the onions to soften, without blackening the sausages.
(at this point transfer to baking dish if using a frying pan on the hob)
Now ensure all parts of the oven proof dish are covered in oil, and pop into the hot hot oven for 5 minutes.
Now the key bit. To the hot pan, add the batter ensuring is sizzles and shut the oven quickly. Don't open the oven for at least 15 minutes.
When browned on top its ready to serve, after about 25/30 minutes.
Serve with a good gravy, mustard, some swiftly steamed greens and some roasted new potatoes if needed.
