When I used to work at YO!Sushi, the chef there would sometimes make me up a bowl of fried rice like this during my break. It's very simple, and makes a tasty meal for one in no time at all.
(If you have left over rice this is a great way to use it up, or you can cook some especially, as I did here).
- Fry some very finely chopped veg in a large pan - red onion, carrots, red pepper
- Add a portion of salmon and continue to fry, breaking up the salmon into little chunks as you go
- Add the cooked rice to the pan and stir it all together
- Pour over a couple of tablespoons of light soy sauce and a good dose of chilli pepper
- Sprinkle with sliced fresh chilli and spring onion.
And that's that.
If you're making this for more than one person, you can increase quantities accordingly. If you're using left over rice it's easy to work out as you can just scoop out a bowlful per person. I work on the premise of 1 pice of salmon per person.
